A delightful twist on the classic Nigerian jollof rice. This recipe features the fragrant and fluffy jasmine rice simmered in a rich, spicy tomato base and paired with perfectly seasoned beef cubes, air-fried to crispy perfection. Ingredients:
For the Jollof Rice:
2 cups jasmine rice
4 large tomatoes (or 1 can of plum tomatoes)
1 large red bell pepper
2 medium onions (divided)
2-3 scotch bonnet peppers (adjust to heat preference)
1/4 cup vegetable oil
2 tablespoons tomato paste
3 cups chicken or beef stock
1 teaspoon thyme
1 teaspoon curry powder
1 bay leaf
1 teaspoon smoked paprika (optional)
1/2 teaspoon ground ginger
1 teaspoon garlic powder
1 bouillon cube (Maggi or Knorr)
Salt and black pepper to taste
For the Air-Fried Seasoned Beef:
500g beef (sirloin or any tender cut), cubed
2 tablespoons vegetable oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon cayenne pepper (optional)
1/2 teaspoon ginger powder
1 bouillon cube or 1 teaspoon bouillon powder
Salt and black pepper to taste
Instructions:
Step 1: Prepare the Jollof Base
Blend the tomatoes, red bell pepper, scotch bonnet peppers, and one onion into a smooth mixture. Set aside.
Dice the second onion and set it aside for sautéing.
Step 2: Cook the Jollof Rice
Heat the vegetable oil in a large pot over medium heat. Add the diced onions and sauté until translucent.
Stir in the tomato paste and cook for 3-5 minutes until it begins to darken and lose its raw taste.
Pour in the blended tomato mixture, thyme, curry powder, smoked paprika, ginger, and garlic powder. Cook on medium heat for 15-20 minutes, stirring occasionally, until the mixture reduces and thickens.
Add the chicken or beef stock, bay leaf, and bouillon cube. Adjust seasoning with salt and black pepper. Stir well.
Rinse the jasmine rice under cold water until the water runs clear. Add it to the pot, stirring to combine.
Reduce the heat to low, cover with foil or a tight-fitting lid, and let it simmer for 20-25 minutes. Stir halfway through to prevent burning. Add a splash of water or stock if needed.
Once the rice is tender and fluffy, remove from heat. Leave it covered for an additional 5 minutes before fluffing with a fork.
Step 3: Prepare the Air-Fried Beef
In a bowl, combine the beef cubes with oil, paprika, garlic powder, onion powder, thyme, cayenne pepper, ginger powder, bouillon, salt, and black pepper. Mix well to coat evenly.
Preheat your air fryer to 200°C (400°F).
Arrange the beef cubes in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through. Cook longer for crispier edges.
Step 4: Serve
Plate the jollof rice and top it with the air-fried beef cubes. Garnish with fresh parsley or sliced onions, if desired.
Pair with fried plantains, boiled egg, a simple salad, or steamed vegetables for a complete meal.
